Mom’s Recipe – Chicken Pulao

My name is Krishna and I am a pure non vegetarian. I eat it every day and a lot of it every time.

I don’t remember the last time I had a complete vegetarian meal out of my own free will.

Many have tried convincing me to change my eating habits but my love for non veg is unwavering.

I have tried many dishes across places but the one that has always been close to my heart is my mom’s homemade andhra style chicken pulao.

And today I’ll share the recipe with you.

Chicken Pulao – The Recipe

(serves 4 regular people,or 2 people like me)

Step 1

Prepare the Chicken Marinade

Chicken Boneless 500gms(or with bone if you prefer)

1 tsp salt

2 tsp chilli powder

1 tsp turmeric powder

2 tbsp curd

2 tbsp ginger garlic paste

Few mint leaves

1 chopped onion

2 chopped green chillies

Mix these and keep aside, for best results refrigerate this mix overnight.

Step 2

This is to be done half an hour before you start cooking

Soak 3 cups of Basmati rice in water and keep aside for half an hour

Also, cook the chicken marinade in an open pan on medium flame till water goes off and the chicken is cooked

Step 3

The Pulao

In a pressure cooker on medium flame, add 2 tbsp ghee and 1 tbsp oil,let it heat up

Then add few cinnamon sticks, bayleaf, cardamom, 2 chopped onions, 3 chopped green chillies, 2 tbsp ginger garlic paste and a few mint leaves

Saute until onions are translucent, then add the basmati rice(drained), 2 tbsp of Biryani masala (You can use any brand) and saute for 2-3 minutes

Then, add 4 cups water, 2 tsp salt, cooked chicken pieces, chopped coriander leaves and squeeze 1 lemon into the mix

Check for taste and adjust salt/spice accordingly.This is the most important step

Step 4

The finale

Close the pressure cooker lid and cook on high flame.

Put it back to simmer just before the first whistle is about to go off

Continue in simmer for 2 minutes then switch off the flame

Open the lid once steam is off and the pulao is ready to serve

If done right,by now your home will be filled with the aroma of spices

Garnish with onions,coriander leaves and raita on the side
