On a rainy evening, me and my wife were craving for some comfort food.
It’s been a long time since we cooked together. So we were looking to prepare something easy and spicy.
The Solution : Chicken NoodlesÂ
We always have some chicken & noodles lying around at our home, so might as well use them together, we thought.
The Recipe
Step 1
Marinate 250g of boneless chicken with 1 tsp salt and 2 tsp chilli powder. ( preferably marinate overnight, but at least half an hour before cooking )
Step 2
Boil the chicken pieces on medium flame for 15-20 minutes, also boil 1-2 eggs at the same time.
Cut the boiled boneless pieces into smaller cubes or thin slices based on your preference.
These can be used as a starter / side serving on their own.
Step 3
Coming to Instant noodles, we prefer the flat curry noodles by top ramen for their spicy seasoning mix.
Boil 750 ml water. Then add 3 noodle strips (don’t break them) and few chopped carrots to the boiling water.
Cook for a minute and add the seasoning mix given with the pack.
Add the chicken pieces now and stir for 5 minutes.
Step 4
Let some soupy gravy remain and switch off the flame.
Garnish with chopped capsicum and egg, and it’s ready to serve.
