Spicy Egg Fried Rice – A quick and easy recipe, comforting food for a beautiful rainy day !!!
The Recipe
Step 1
Cook 1 cup of rice and also boil a handful of green peas before you start this recipe.
Step 2
To an open pan on medium flame, add 2 tbsp of oil and pour 4 eggs into it. Add a little salt and pepper, stir it up and make scrambled eggs. Transfer to a plate and keep it aside.
Step 3
Again, add 2 tbsp of oil. Once the oil heats up, add 2-3 chopped onions and saute them till they turn translucent. Add a pinch of salt to get the moisture out.
Add chopped garlic, ginger, carrots and green chillies to the onions. Saute them for a few minutes and add the boiled green peas.
After 5 minutes, add the boiled rice to the pan and mix well. To this mixture, add a few drops of soya sauce, 2-3 Tsp of chili powder and garam masala.
Stir it up and check for taste, adjust salt / chili powder accordingly.
Step 4
Add the scrambled eggs to this rice and mix it well. The Spicy Egg Fried Rice is ready to serve!!!
Garnish with coriander leaves and you’re good to go.
