This is my aunt’s andhra style Chicken Fry recipe and one of my favorites. Also, its quick and easy to make!!!
Step 1 – The Chicken Fry Marinade
Marinate 1.5 kg chicken ( preferably leg joints as they are tender and quick to cook ) with 3 Tbsp rock salt, 3 Tbsp chili powder and 2 Tbsp ginger garlic paste for at least an hour, preferably overnight.
Boil the marinated chicken in a closed vessel on medium flame till the pieces are cooked.
Step 2
While the chicken is being cooked, In another open pan, add few cumin seeds, 5-6 chopped onions, and saute till they turn golden brown.
Step 3
Transfer the cooked chicken along with leftover water into this pan.
Mix everything together. Check for taste and adjust salt/chili powder accordingly.
Add 2 tbsp of garam masala and switch off the flame once the water evaporates.
And it’s ready to serve !!!
Step 4 – Garnishing the Chicken Fry
Garnish with coriander leaves, onions, chillies and serve with rice.
